CANCER - Breast Cancer, Fruits and Vegetables
Two recent studies have added to the known data that nutrients, fiber and antioxidants from fruits and vegetables protect women from cancer. A State University of New York study of 310 women with breast cancer, compared to 316 women without disease, found that the latter group ate more fruits and vegetables than the first group. Components in fruits and vegetables include folic acid, carotenoids and vitamin C. Another study stated that the lower rates of breast cancer traditionally found in Hispanic women may be related to a diet high in beans. This retrospective study found that Hispanic women ate twice as many beans as white women. There is an estrogen-blocking phytoestrogen which is high in beans. It was also found that Hispanic women in this study ate a higher amount of olive oil, which is high in oleic acid, and may also have a cancer preventive effect. The authors stated that there is not much indication that fat consumption increases the risk of breast cancer in adulthood, even though this has been reported.

NUTRITION - Antioxidants, Fruits and Vegetables
Approximately 10,000 times a day every cell in the body is exposed to oxidants that damage the cell's DNA. Eventually this takes a toll. For over 20 years Bruce Ames, Ph.D. has been a leader in the fields of mutagenesis and genetic toxicology. He has looked at the cancer causing potential of pesticides, pollution, synthetic food additives and food additives. He has stated, controversially that polluted air and water pose very small cancer risks. Some 99.9% of toxic chemicals people are exposed to come from natural sources such as the plants they eat. Pesticides help reduce cancer rates because they cut the cost of fruits and vegetables which enhance their consumption. The beneficial effects of fruits and vegetable consumption are so large when it comes to health that people in the bottom 4th of the dietary intake of fruits and vegetables have twice the cancer rate for most types of cancers as people in the top. In a review of over 172 epidemiologic studies it has been consistently shown the protective effect of fruits and vegetables. For almost every type of cancer you double your risk if you eat a few fruit and vegetables. Fruit and vegetable consumption may reduce the rates of heart attacks and cataracts. Degenerative diseases will probably also be reduced by a good diet. Dr. Ames states, "If you don't get enough antioxidants, it is the equivalent of irradiating yourself". Dr. Ames is not advocating megadoses of vitamins but extra vitamin C, E and possibly beta-carotene (though that is better from the diet) is warranted. Doses of vitamin E include 400 units of vitamin E and 250 mg of vitamin C. Eventually we'll have the abilities to determine more specific doses of nutritional supplements. It is possible that older individuals may need more due to being under more oxidant stress. Smokers definitely need more since they are under oxidant stress. With regards to the Finnish study as not showing any benefit with vitamin E it is noted that these individuals had been smoking for 30 years and most of the damage already had been done. They also used very small amounts of vitamin E. There was also not any extra vitamin C. Finns do not eat a lot of fruits and vegetables and vitamin C and E are needed together. What will be useful in the future for physicians are assay levels of vitamins and other biochemical markers such as homocysteine levels that indicate food imbalance. Instead of a physician listening for risk factors with these assays, future physicians could quickly determine whether the individual needed nutrients such as folic acid, ascorbate, vitamin E and other similar nutrients. If a physician, in the future, is going to be involved in prevention they will have to assess the biochemical parameters of the individual. Physical examinations will include the monitoring of the patient's metabolism as well as more standard indicators of health such as heart rate. Currently 15% of the population and half of poor African Americans in the United States are folate deficient. Dr. Ames also states, "...If they don't get enough ascorbate (vitamin C) it's the same as stepping unprotected in front of an x-ray machine". There are 3 magic bullets: "Don't smoke, eat a good diet, and exercise". There are 3 main killers: smoking, a bad diet and sedentary lifestyle. It is noted that only 9% of the Americans eat the recommended 2 servings of fruit and 3 servings of vegetables per day. When physicians can give a patient a copy of tests that show, because of nutritional deficiency, their chromosomes are being injured and increasing the risk of cancer this will have a big impact. These tests are arriving slowly but they are coming.
